This March, we have prepared the production of 881 bottles of this year’s Sea Drink. The base wine is a single varietal from the Alt Penedès (Catalonia). It is the variety Xarel·lo Vermell that has been harvested by hand during the first week of September.

861 bottles will be stored in the underwater winery at a depth of 35 meters for a minimum of 18 months and, for comparative tests, in parallel, 20 of these bottles will make the second fermentation and aging in a conventional cellar.
