The project of Coral Sea Marine Drink began in 2011 as an academic work and was awarded with the prize for the best business project granted by the Girona’s Master Association of the 28th edition of the MBA of the University of Girona. This project was developed around the innovative business idea based on the production of sparkling wine of great quality, with the peculiarity that the second fermentation and aging take place entirely in the seabed, making the sea an active part of the productive process.

This start was followed by four years of successful experiments carried out with rigor, which, in addition, had the internal technical direction of Antonio Membrives, with the collaboration and opinions of experts such as Pedro Muñoz (winemaker and director of the cavas Roger Goulart) Joan Lluís Gómez (sommelier of the restaurant Sant Pau in Sant Pol de Mar), Montse Velasco (sommelier of the restaurant La Cuina del Guinardó of Barcelona) and Josep Roca (sommelier of the Celler de Can Roca in Girona).

Finally, four years after its creation, and after conducting several experiments and obtaining the method’s patent, Coral Marine Sea Drink will be presented publicly in the Girona’s Gastronomic Forum 2015, where it will be exhibiting and conducting a workshop/tasting with experts of the sector.
